Sferies (Anise Matzo Doughnuts)

Sferies are the highlight of Passover for my kids. They like it so much (and you will too) that I always have to make at least 2 or 3 batches during the 8 days of the holiday.
Serves 6
12 eggs
12 Tbsp matzo meal
2 lbs (500 g) sugar
2 cups (50 cl) water
2 tsp anise extract
Oil for frying
Combine water and sugar in a pot. Cook on medium heat, stirring constantly.
Reduce to low heat when mixture comes to a boil. Add anise extract.
Keep on low heat , stirring from time to time.
Combine in a large bowl 1 egg with 1 Tbsp matzo meal. Mix, and repeat process one egg at a time. Add a few Tbsp water if mixture becomes too thick (mixture must have the consistency of a batter).
Heat at least 3 inches of oil in a deep fryer or a big pot.
When oil is hot drop the batter a tablespoon at a time into it. Fry until golden brown, remove, and place doughnuts into the sugar syrup.
Leave into syrup a few minutes, turning doughnuts once. Remove from syrup when soaked.
Pour remaining syrup over bowl full of sferies when done.
Eat warm or cold.
