Although they are really called white Purim cookies, they are everything but white, with a lot of colors and shapes. Again, kids love baking and eating them!
For 30 cookies
4 cups (500 g) flour
¾ cup (150 g) sugar
1 cup (25 cl) oil
1 tsp baking powder
1 tsp vanilla extract
3 egg whites
1 lb (500 g) powered sugar
Rainbow color or any color sprinkle jimmies
Combine all ingredients together in a stand mixer. Mix on medium speed for 2 minutes, slowly adding water (if needed) until a smooth and non sticky dough forms. Place dough on a floured work surface. Cut in 4 for easier manipulation. Roll dough until it becomes 1/3 inch thick. Cut dough with cookie cutters of different size and shapes. Continue until there is no dough left. Bake in the oven at 380F degrees for 10 minutes (cookies are done when underneath gets brown). Let cookies cool down.
In a bowl, combine eggs white and a pinch of salt. Mix together, adding slowly sugar, until mixture is smooth and shiny. Divide mixture into different bowls. Add a few drops of food coloring into each bowl, to create different colors. Dip each cookie into icing and sprinkle with jimmies. Dispose each cookie on a table covered with a plastic tablecloth. Let cookies dry overnight.
Store cookies in an airtight container.
