Fava Bean and Cumin Salad

This traditional Algerian appetizer is present at almost every holiday. Healthy, original, easy to prepare and not expensive, it will become fast a regular appetizer for your holidays too! As fava beans are not common in the United States, I tried the same recipe with frozen baby lima beans and even frozen soy beans. It works very well too..
Serves 6
½ lb frozen fava beans or baby lima beans or soy beans
2 garlic cloves, diced
1 tsp paprika
2 tsp ground cumin
4 Tbsp canola oil
½ tsp cooking vinegar
Salt
In a pot, sauté the garlic with the oil and paprika on medium heat for 1 minute.
Add 2 cups of water. When it comes into a boil, add the beans, salt and cumin.
Lower the heat to low heat, and let it cook until tender, around 20 minutes. The juice should be reduced to a sauce consistency. If not, let simmer until sauce consistency.
When it’s almost done, add the vinegar, and according to taste a little bit more of cumin or cayenne pepper (optional).
Serve cold.
