Picture

          Serves 6
                            1 lb ground turkey
                            1 onion, minced
                            1 onion, sliced
                            1 egg
                            1 small tomato
4 to 5 Tbsp matzo meal or bread crumbs
                            2 Tbsp flour
                                                                                         1/2 tsp curry powder
                                                                                         Canola oil
                                                                                         Salt and pepper
                                                                                         Cayenne pepper (optional)

In a big bowl, mix together ground turkey, minced onion, and matzo meal. Add one egg, curry, salt, pepper and cayenne pepper, and mix everything together.

Form a meatball with a small a piece of the mixture, and gently throw it from hand to hand, until meatball is firm and well formed. Reserve, and repeat the process until all the meatballs are formed.
Place 2 Tbsp flour on a large plate, and roll each meatball into flour.

Heat 1/4 inch of oil in a large skillet on medium heat. When oil is hot, fry meatballs on each side until golden brown. Reserve meatballs.
Pour oil from skillet into a big pan, using a very fine strainer. Add a small tomato to the pan, gently smashing it with a fork. Add meatballs and 1 cup water (just enough to barely cover meatballs).
Cook on medium low heat for 10 minutes.
Gently remove meatballs, immediately covering them with aluminum foil.Let simmer juices on low heat until liquids are reduced to sauce consistency. Add meatballs to pan a few minutes before serving, gently removing them when warm. Add potatoes to pan in remaining sauce.
 Serve warm, decorated with parsley.
