BEEF STEW WITH PEAS

It is a traditional Algerian recipe often served for Friday nights dinners. Another version of this dish is to use meatballs instead of beef cubes.
Serves 6
2 lbs of beef cubes
1 lbs of frozen peas
1 onion, minced
1 small tomato
3 tbsp canola oil
Salt, pepper to taste
In a medium pan, sauté the meat cubes with oil on medium heat until brown on all sides. Add the onion, sauté on medium heat for 2 more minutes.
Add the tomato, squashing it with a fork.
Add enough water to cover the meat.
Add frozen peas, season with salt and pepper.
After it comes to a boil, cook uncovered on low heat for 30 minutes or more if needed, being careful that the meat cubes are always covered. Juices should be reduced almost to a sauce consistency.
Serve this stew either plain, either with plain couscous as a side dish.
