Algerian Doughnuts

Algerian doughnuts are a very popular fried dessert for Hanukkah in France. They’re at their best when served warm, and sprinkled with sugar.
Serves 6
1 lb flour
2 oz fresh active yeast
1 pinch of salt
Sugar to taste
Oil for frying
In a medium bowl, mix the yeast with 1 cup of lukewarm water. To make sure it is the right temperature, test the tap water with your elbow: it must feel neither warm nor cold. In a big bowl mix flour, water, and salt until it forms a wet dough (add water if needed). Cover with a wet towel for at least 1 hour- until the dough doubles in size. Heat 2 inches of oil in a deep frying pan. Oil your hands, take just enough of the dough to form a doughnut, and break open the centre with your fingers. Place the doughnut into the oil, turning to brown on both sides Sprinkle with sugar. Serve while still warm.
